I recently became completely obsessed with eating granola and yogurt; it’s healthy, light, filling…delicious. As I was craving my new found favorite snack, I decided I wanted to figure out how to make the granola, since it usually only comes in tiny bags that last me about 2.5 days.
When I said obsessed, I meant really obsessed…
Anyways, I figured out this fun concoction, and I can continue to enjoy my yummy snack without having to put it on the grocery list every week. It can be put in yogurt, which is my favorite, doused in your preferred milk, or simply eaten dry. Whatever way suits you best, this stuff is good for! I personally eat this as my breakfast in the morning, and I don’t usually eat breakfast. I also tend to avoid spending time in the kitchen, but this is simple and quick enough that I can whip it together in approximately 15-20 minutes, baking time included.
So, here’s my recipe for Vanilla Cranberry Granola! Enjoy!
Prep Time: approx. 5 min. Bake Time: 10 min.
Ingredients
- ½ cup olive oil
- ½ cup honey
- 2 pinches salt
- 3 teaspoons vanilla
- 3 cups rolled or instant oats
- Handful of dried cranberries
Directions
- In a baking dish mix olive oil, honey, salt, and vanilla together, then add oats and cranberries.
- Place in 375°F preheated oven and bake for 10 minutes, stirring often to keep it from burning. Set it out to let it cool, then store it in an airtight container for storage. When you initially pull it out of the oven, it’ll still be wet and a little sticky, but as it cools it will become more solid.
